Baking Our Way To Health With Homemade Quaker Oats Cream Pie

I’ve been hard at work in the kitchen as I try to adjust to the new normal. Most of the time, I find myself turning to food for comfort. I’ve realized that my being in the kitchen gave me the time to experiment with my four-year old who seems to also enjoy cooking and baking as practical life skills. The lockdown has definitely unleashed our culinary creativity – oftentimes, making do with the ingredients we have at hand.

One of the recipes we recently discovered together is the Quaker Oats Cream Pie. It’s a recipe created by Chef Miko Aspiras that’s easy, tasty and healthy. “It’s a delicious way to help take care of the immune system,” Chef Miko said.

Known as a supergrain, oats are a natural source of iron essential. Boost your iron intake to help build your immunity by adding oats to your daily diet. There are so many ways to cook oats. You can bake them, cook them on the stove top, make overnight oats and for quick-cooking ones, you can just add hot water.

Here’s our own version of the Quaker Oats Cream Pie.

Mom and daughter are happy to report that these soft and chewy cookies which are sandwiched together by a yummy, vanilla buttercream filling ended up tasting better than commercially-bought ones because we can tweak the ingredients to our liking making it less sweet and more oaty (the term invented by my kiddo).
